1 ripe mango, peeled
1 ripe peach
1 cup unsweetened cashew milk
1 tsp organic coconut oil
2 ice cubes
Cut cantaloupe in half and remove seeds with a spoon. Slice about 1/2cm straight off of the bottom to make sure it doesn’t lose balance and stands up straight.
Blend mango, peach, cashew milk, coconut oil and ice cubes and pour into cantaloupe cavity.
Extra: I sliced up a nectarine and a plum and dropped them in the bowl and ate it like cereal and it was all quite filling!
Nice light summer snack idea. It’s pretty filling but I was ready to eat again within an hour because of the hole in my leg. You don’t have to make a mango peach smoothie but it does go very well with the cantaloupe. Looking forward to some feedback!
