Paleo Hasselback Sweet Potatoes

Day 17/30 and it’s actually getting easier and I’m at that weird point where carrots and sweet potatoes taste really sweet to me because I’m deprived of lattes and sangria.  The same point where I have a tiny bite of salmon and wonder if there’s anything better in the world.  It’s funny how your palette can change so easily.  These tasted like a sinful dessert to me and I almost felt like I was cheating on Whole30 but it’s really just a potato.  Any opposition?


6 small sweet potatoes

2 sweet apples, peeled and sliced 3/8″ thin

1 tsp cinnamon

1/2 tsp salt

2 tbsp coconut oil, melted

1 cup crushed walnuts

Preheat oven to 350F.

Wash sweet potatoes and brush off as much of the skin as possible.  Thinly slice being careful not to cut all the way through.  Use other utensils as support. (Like in the photo)

Set all the sliced potatoes in a baking sheet.  In a small mixing bowl, toss apple slices, cinnamon, salt, walnuts and melted coconut oil until all the pieces of apple are coated.  Place apple slices and walnut chunks inside of the sweet potato slices.  Use a pastry brush to spread the remaining coconut oil all over potatoes.

Bake in oven at 350F for 45 minutes.
