Apple Flower Dessert

I think being sick for like 11 days has changed the way I see the world. I actually slept last night for the first time since then and I just want to sing to my plants and take up new hobbies and call each of my friends and say something nice. Despite being sick, I can still taste, which is what’s really important. The day a cold ruins my appetite is when we have a real problem.

While cozied up with tea, watching the snow fall over Edmonton, I got into the Christmas spirit. If you think it’s too early, I need you to take your negativity to another planet. We makin’ apple ciders, we makin’ apple crumbles, we makin’ paleo egg nog, we attempin’ paleo shortbread. Have you ever tried the dairy-free Bailey’s? I’m telling you, this is the BEST season or gtfo.

If you aren’t comfortable with a mandolin, I do not recommend attempting this.

3 Gala apples

3 tbsp honey

1 tbsp fresh lemon juice

1 tsp cinnamon

1 tsp almond flour



Core apples and cut each one into 4 equal pieces. Set the mandolin to 1mm. Slice all the pieces, being careful to keep them in order. Place into a small cast iron pan, starting from the outside and working your way to the middle. Blanche 10-15 apple slices for 1 minute to make the centre of the flower more flexible.

Preheat oven to 400F. Drizzle lemon and honey over everything. Powder the almond flour and cinnamon last. Bake for 30 minutes.

Serve warm. Try it with coconut base ice cream!
