I’m always so scared to delve into the world of paleo baking but every time I do, it’s so rewarding. I’ve made this a few times in different ways and just realized I’ve never posted any kind of banana bread, like some dumb idiot.
Blah blah, something about not being paleo anymore. Something something about explaining myself. Something else about not caring. Here’s the recipe:
Dry Ingredients
2 cups coconut flour
2 tsp baking soda
1 tsp cinnamon
1/2 cup whole golden flax seeds
1/4 cup white chia seeds
4 tsp xanthan gum
2 squares 100% unsweetened bakers chocolate, chopped
Wet Ingredients
3 ripe bananas
1 1/2 cups unsweetened almond milk
1 tsp apple cider vinegar
1 tsp extra virgin olive oil
1 cup pitted dates
2 eggs
1 tsp vanilla extract
1 tsp unrefined coconut oil to grease pan
Instructions
Preheat oven to 350F.
Combine all dry ingredients in a large mixing bowl.
Combine all wet ingredients in a food processor until dates are fully blended.
Combine wet and dry ingredients in mixing bowl.
Grease a 9″x5″ bread pan with coconut oil and squish mixture into it. It’s thiccc so you’ll have to thumb it in.
Optional, garnish with chopped nuts, I used pistachios.
Bake at 350 for 55 minutes.
Eat alone.
Optional: Serve to people you actually like.
