- 8 large free-range organic eggs
- 3 to matoes 2 diced and the other thinly sliced
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 tsp salt
- 1 cup chopped broccoli
- 1/2 tsp black pepper
- 6-7 fresh basil leaves
- Preheat oven to 350F.
- Combine eggs, diced tomatoes, broccoli, olive oil, garlic, salt, and pepper in medium mixing bowl and whisk.
- Transfer to a 9x9x2 baking dish.
- Garnish with sliced tomatoes and basil leaves.
- Bake for 30 minutes.
- Serve hot.
