I’m always so scared to delve into the world of paleo baking but every time I do, it’s so rewarding. I’ve made this a few times in different ways and just realized I’ve never posted any kind of banana bread, like some big dumb dumb.
Paleo Banana Bread
I have nothing wrong with grains, but they're not always for everybody!When the going gets tough, the tough get paleo banana bread.
Servings: 1 loaf
Equipment
- Bread pan
- Food Processor
Ingredients
Dry Ingredients
- 2 cups coconut flour
- 2 tsp baking soda
- 1 tsp ground true cinnamon
- 1/2 cup whole golden flax seeds
- 1/2 cup white chia seeds
- 4 tsp xanthan gum
- 2 squares unsweetened bakers chocolate, chopped
Wet Ingredients
- 3 very ripe bananas
- 1 1/2 cups unsweetened almond milk
- 1 tsp organic apple cider vinegar
- 1 tsp extra virgin olive oil
- 1 cup pitted dates, soaked
- 2 free range organic eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350F
- Combine all dry ingredients in a large mixing bowl
- Combine all wet ingredients in a food processor until dates are fully blended
- Combine wet and dry ingredients in mixing bowl
- Grease a 9″x5″ bread pan with coconut oil and squish mixture into it (It’s thiccc so you’ll have to thumb it in)
- Optional, garnish with chopped nuts, I used pistachios
- Bake at 350 for 55 minutes
- Eat alone
- Optional: Serve to people you like
