Jalapeño + Guacamole Lettuce Burgers

I hate eating when it’s hot outside.  If I could eat a banana and water and survive the day, I would.  This was really fresh and bearable.  Inspired by myself laying in bed, compromising with my own body on what I would actually eat.

Jalapeno + Guac Burgers

Servings: 4 patties

Ingredients

  • 1 head of iceberg lettuce
  • 1 to mato
  • 3 garlic dill pickles
  • 1 lb grass fed ground beef
  • 1/2 yellow cooking onion minced
  • 4 garlic cloves minced
  • 1 jalapeno pepper finely chopped
  • 1 large egg
  • 1/2 tsp salt
  • 1/2 tsp chili flakes
  • 1/2 avocado
  • 1/2 lime squeezed
  • 2 tbsp water
  • 2 tbsp coconut oil

Instructions

Burger Patties

  • In a large mixing bowl, combine ground beef, onion, garlic, jalapeno, one egg, chili flakes, salt.
  • Form patties.
  • In a large frying pan, melt coconut oil on a low heat cook patties for 10 minutes and then flip.
  • Cook for 10 more minutes.

Burger Stuffs

  • Slice tomato and pickles.
  • Gently tear whole lettuce leaves from the head of lettuce to use instead of buns.

Guacamole Spread

  • Add half of the avocado, loosely chopped, and lime juice and 2 tbsp of water to a blender.
  • Blend for 10 seconds.
