    A quick, nutritious and delicious meal idea when you’re in a pinch. I always keep sweet potatoes around just in case, and they stay good forever.

    Sweet Potato "Toast"

    Cook Time30 mins

    Ingredients

    • 1 sweet potato sliced ~1cm thick
    • 1 can tuna
    • 1 tbsp mayonnaise
    • 1 avocado
    • sliced cucumber
    • 1/4 cup mint leaves
    • 1/2 tsp pepper
    • 1/2 tsp sea salt

    Instructions

    • Preheat oven to 375F.
    • Place sweet potato slices flat on a baking sheet and bake for 30 minutes.
    • Don't cut your fingers off.
