A quick, nutritious and delicious meal idea when you’re in a pinch. I always keep sweet potatoes around just in case, and they stay good forever.
Sweet Potato "Toast"
- 1 sweet potato sliced ~1cm thick
- 1 can tuna
- 1 tbsp mayonnaise
- 1 avocado
- sliced cucumber
- 1/4 cup mint leaves
- 1/2 tsp pepper
- 1/2 tsp sea salt
- Preheat oven to 375F.
- Place sweet potato slices flat on a baking sheet and bake for 30 minutes.
- Don't cut your fingers off.
