    Southwest Burger Bowl

    Servings: 3 bowls

    Ingredients

    Patties

    • 1/2 lb grass-fed ground beef
    • 1/2 minced onion
    • 1 free-range organic egg
    • 1/2 tbsp chipotle powder
    • 1/2 tsp garlic powder
    • 1/2 tsp cumin
    • 1/2 tsp salt

    Salad

    • 1/2 head iceberg lettuce chopped
    • 1 to mato diced
    • 1 slice of onion
    • 1 tbsp dijon mustard
    • 1 carrot shredded
    • Avocado sliced for garnish

    Sauce

    • 1/2 cup mayonnaise
    • 1/4 roasted red pepper chopped
    • 1/4 tsp sea salt
    • 1/4 tsp garlic powder
    • 1/2 tsp oregano
    • 1 tbsp coconut oil melted
    • 1 tsp chipotle powder
    • 1 tsp chili powder

    Instructions

    Patties

    • Combine all ingredients in a small mixing bowl.
    • Shape into 3 patties.
    • Fry in a small pan, flipping occasionally for 10 minutes.

    Sauce

    • Preheat oven to 350F.
    • Chop the red pepper and combine it with sea salt, coconut oil, garlic powder, and oregano.
    • Roast, stirring occasionally for 30 minutes.  Set to the side to cool.
    • Combine mayonnaise with red peppers and remaining spices.  Do not blend.
    • Spoon over salad.
